"90 out of 100...Made from the estate's younger vines (under 10-years of age), the 2005 Les Aromes de Pavie is a blend of 70% Merlot, 20% Cabernet Franc, and 10% Cabernet Sauvignon aged in primarily old oak for two years. Deep ruby/purple-hued, soft, fruity, medium to full-bodied, and spicy with hints of high class cigar tobacco mixed with cassis and sweet cherries, it possesses some of its bigger sibling's personality, and is capable of lasting 10-12 years." - WA

Starting with the 2005 vintage, Ch. Pavie has announced the release of a second-label wine under the name of Aromes de Pavie. Principally from young vines that are less than ten years old, the final blend also contains numerous barrels that were remaining following the severe selection that is practiced for the first wine. The same care and attention goes into the production of this wine as to Pavie itself. In the vineyard the older vines are pruned to six buds and the younger ones to just two. A green harvest is carried out in the vineyard and the grapes are harvested and sorted by hand. The wine is fermented in temperature-controlled wooden vats over a period of three weeks. Malolactic fermentation also takes place in wood and the wine is then aged in 30% new oak for 18 months.
